Across the micro-terroirs of Cape Malea, olive trees grow in demanding conditions, exposed to wind, sun and limited water. In adapting to this environment, the tree draws on its natural resilience, activating protective mechanisms in which phenolic compounds play an important role.
Here, adversity becomes part of character—shaping olives with the potential for remarkable phenolic richness and oils with balance, vibrant aromas, and a distinctive sense of place.
